50LP loaf 1: English muffin bread for the bread machine

I love english muffins (especially Bay’s, which we get here in the refrigerated department), and I’ve made them from scratch before, but it’s so much easier to throw a few ingredients into my bread machine, so I decided to try this recipe for an english muffin bread. My mother is a big fan of this recipe, and has been encouraging me to try it for a while now.
This recipe comes from the Fleischmann’s Yeast “Bread World” website which I find to be a great source for reliable bread machine recipes, as well as conventional bread recipes.
Here is a link to the English Muffin Bread recipe for the bread machine. The site lists the ingredient quantities for a 1 lb.. and a 1-1/2 lb. size loaf, and I chose the larger one since my machine has a 2 pound capacity (bigger is better, right?). There is no fat used in this recipe.
I made a few tweaks, so I’ll write out the exact recipe I used here.
My variation of the English Muffin Bread recipe:
1-1/2 cups water
2 cups all purpose flour (King Arthur)
1-1/2 cups white whole wheat flour (also King Arthur)
3 T. sugar
1/4 cup nonfat dry milk
1-1/2 tsp. salt
1/4 tsp. baking soda
1 T. Hodgson Mill Vital Wheat Gluten with Vitamin C
2-1/4 tsp. yeast (I used Saf Instant Yeast – sorry Fleischmann’s! I do buy your brand sometimes!)
Settings: I used the basic setting with medium crust
Machine: Zojirushi BBCC-X20
My results: This was a very tasty loaf of bread with good flavor but the texture wasn’t as similar to english muffins as I expected it would be. It didn’t quite look like the lovely picture on the Fleischmann’s website. It had quite a thick chewy crust with the medium crust setting. It was really nice toasted for breakfast, and my Mom says it makes great sandwiches although we didn’t try that.
Verdict: I would make this again for a breakfast bread.
